Rena, My dad makes the best fried fish ever. Too bad for us though...with my mom still being so ill, no time for fishing right now. Maybe soon......

Going all the way back to the first post on this site to say: Fried fish, catfish, is the best at Fat Cat's, and they are moving from the Dumas highway to the old El Chico/ Pepito's building on I-40.

I second that. Fat Cats is the only place anywhere I have had fried catfish fillets that were moist and tender. It is a hard place to find, and I think it's great they are moving to a new location.
I think they farm raise their own catfish on location, for whatever that is worth.
Whenever I find myself in a restaurant that serves blackened catfish, I always order that. I've never been disappointed . My biggest complaint against catfish, and I am not from this part of the country, but everywhere I have had deep fried catfish fillets they were always overcooked and tough.

That's a big change...because a lot of the people up north...never get as far south as I-40. Of course I'm seldom far enough north in Amarillo to see the Dumas highway much.

I know where a small alligator farm is....right here in the Panhandle.
You can't miss it...because they have the nose and thingypit of an old DC9 airliner out in front.

Maybe SJ needs to branch out a bit on his travels around the Panhandle.... ;D Because if you drive down the right state highway.... You can't miss the airplane thingypit sitting in front of the alligator farm. Wonder if all the airline pilots know they fly around...while sitting in a thingypit?
