Don't know if the AGN has ever covered that....but I think the Texas Country Reporter has....

Alligator is ok...... as long as it isn't overcooked. Then it gets rubbery like overcooked lobster.

The best alligator I've ever had is at a renaissance faire down by Houston. Fried on a stick. Like a juicier chicken, and tender if cooked right.

Going all the way back to the first post on this site to say: Fried fish, catfish, is the best at Fat Cat's, and they are moving from the Dumas highway to the old El Chico/ Pepito's building on I-40. I haven't been to Fat Cat's since the beginning of last Summer. They didn't have any A/C and it must have been 90+ degrees in there. Also, they serve their catfish in those nasty, greasy, dried tarter sauce and ketchup encrusted baskets that apparently never get washed...
