This is a summer favorite at jazzman's house. I have already made it about five times since May. But some people have never heard of it or ever tried it which is a pity.
There are numerous variations just like potato salad but they all have certain elements in common. Here is the basic corn salad and once you have tried it you can then make changes to suit your own tastes. There are four principle ingredients and all are crucial you can add others but don't leave out ANY of the crucial ones. This recipe is for a small salad suitable for two to three people. Take one cucumber and peel it and lob off a little on each end. Cut the cuke lengthwise to make two halves and then again to make four quarters. If you want you can remove the seeds by placing the pieces with the rounded side down and the seeds facing up. Then holding your knife parallel to the cutting board slice along the cuke removing the seeds in a long strip. Now cut each piece into two long pieces for a total of eight long slices of cucumber. Now cut each slice into bite sized portions. Place them in a bowl. Next take four green onions and slice off the stalk leaving pieces about six inches long including some of the green portion along with the bulb. Slice off 1/8 of the ends to remove the roots. Now slice all four of the onions into small slices until you have a pile of them. Then dice them further into small bits. Add them to the cucumbers. Next take two radishes and slice off a small potion on each end removing the long root and the stalk. cut each radish in half and then with the flat side down cut each half into thin slices. Turn the slices sideways keeping them together and slice them again into three portions. Do the same with the other three halves and then dice them further into very small pieces. They are somewhat hot and peppery, you don't want to bite into too large a piece. Add them to the cucumbers and onions. Open a standard can of whole Kernel yellow or white corn and drain the liquid from it then add the corn to the other three ingredients. Mix thoroughly. Now to make the dressing you can use either Miracle Whip salad dressing or Real mayonnaise as suits your taste. Take three Tbs and add to the vegetable mixture along with a Tsp of either sweet pickle relish or sweet Chow Chow. Mix throughly and add a sprinkle off black pepper and serve chilled.
