This place is a treasure in Dalhart. They have one of the best local burgers I've ever had. I rank it up there with Coyote Bluff, and I like it better than Blue Sky, which I like a lot.
I'm always the one to pile everything possible on a burger: bacon, japs, green chile, always mustard AND mayo, bring it on. I decided to try some rare restraint at the Grill, however. Because their beef is so flavorful, I wanted to try a burger relatively paired down: Simply cheese and mayo, and I decided on pickles at the last minute. It was devine. The meat is all craggley like they smush it onto the grill with the spatula. It forms a great crust redolent of carmalized onions, which is a topping that I've always gotten before. But even without the onions, I could taste their essence in this burger. Their attention to detail extends even to the butter-griddled buns.
I've been told they have good onion rings. I intend to find out next week.
If you are planning a ski trip to Colorado, try to time Dalhart for lunch or dinner. Just not Sunday.
