We went there last night. Great pizza, different combos than what you find at any chain. The Basil Bread appetizer was sooo good! You can get pizzas without tomato sauce (in case you are allergic to tomato products or just don't like sauce).
Who was next to us eating? Bill Turner and his family! (Former weather man for KAMR/Fox 14)
Located off of Civic Circle, next door to Snow White Bakery. Closed Sundays and Mondays

I've been to Basil Docs once so far. Good food, but rather pricey. You get what you pay for though, and it was nice to have a pizza from someplace other than a chain restaurant (Pizza Hut, Papa John's, etc.). It's worth going back for, but it will probably be for a "special occasion" and I have enough in my bank account. :-)

I've been there once. It wasn't bad but too pretentious. Pizza shouldn't be pretentious. I hope that's spelled right. Hey, is DOC on this forum?

How much tomato sauce do they use?
What I've found with the locally-owned pizza places...is that they usually use too much tomato sauce...and not enough cheese.
The tomato sauce is much cheaper than cheese...so the small places... load up on the sauce...and skimp on the cheese....which make for gooey messy pizza.
Lots of cheese...and just a little bit of tomato sauce is what it takes for a great pizza.
If Basil Doc's uses lots of cheese and meat...then I might consider going there.

The local places usually use Tomato Sauce that is mixed from a powder. When I was in HS, I worked for a while as a pizza delivery person at both Mr. Gatti's and Pizza Hut. They would take their packages of dried tomato paste powder, dump it into a trash can, and mix it up with a hose. That is one of the reasons it tends to be so mediocre.
The tomato sauce is also an important aspect in the construction of a pizza, just like the topping. There needs to be real, fresh sauce, though, and not a premixed paste.

Basil Doc's is pretty good stuff. However, I think they overwork the dough, thus producing too much gluten. This yields a chewy dough that just gets harder to chew the longer it is out of the oven. For this reason, I suggest eating in the restaurant instead of takeout. Other than that, they are great.
As far as sauce / cheese ratio, if you're not a sauce guy, they have a large selection of "white" pizzas. (no sauce) If you opt for the traditional tomato sauce pizza, it is a chunky, tangy sauce and I think about the right amount.
They certainly don't use "powders" - this isn't little caesars we're talking about. The best sauce comes from imported whole peeled San Marzano tomatoes. I think BD's is using a quality canned tomato.
I've been making my own pizza's at home for years. When I don't feel like cooking, Basil Doc's is a good substitute. Also has a nice atmosphere and pretty good service / beer & wine selection.

I love making homemade pizza, too. Basil Doc's seems closest to what I make (at least when I like what I make.)
